For 6 people
3 cups cherry tomatoes cut in half, of grape yellow and red
3 cups 1/4 "Persian cucumber slices (or other medium diced cucumber, peeled first if necessary)
1 cup red onion, thinly sliced, the lengths to 1-1/2 "
2 tablespoons dried parley flakes
3 tablespoons cider vinegar
salt (or not) and pepper to taste
Place all ingredients in a bowl and mix. Serve immediately or refrigerate until ready to serve.
